Elaine Probst, 86, passed away on February 28, 2025 at All Saints Senior Living in Shakopee, MN. A private service will be held for immediate family.
Elaine was born on June 7, 1938 to Leo and Genevieve (Armstrong) Erpelding in Woodstock, MN. She graduated from Pipestone High School. On September 24, 1960 she married Tom Probst at St. Martin’s Catholic Church in Woodstock, MN. Elaine and Tom owned and operated Probst Jewelry and Gifts in Fulda for over 50 successful years. She enjoyed an evening glass of wine, watching the Minnesota Twins, reading the newspaper, gardening, and spending time with her family.
Elaine is survived by her daughters Cindy DeKruif (Doug) of Sacred Heart, MN and Kristie Probst (David Gadberry) of Savage, MN; grandchildren Casie DeKruif (Bryan Larson) of Bemidji, MN, Nathan Gadberry of Savage, MN, and Kiera Gadberry of Savage, MN; sister Donna (Jerry) Platt of Lake Wilson, MN; brothers Pat Erpelding of Slayton, MN and Lloyd (Kedo) Erpelding of Woodstock, MN; sisters-in-law Donita (Mel) Place of Blue Earth, MN, Esther Reuter of Sioux Falls, SD and Pat Probst of Brooklyn Park, MN; and numerous nieces and nephews. She is preceded in death by her parents, her husband Tom, and her brother, Merle Erpelding.
In Elaine’s honor, the family requests that donations be made to organizations that address dementia, such as the Alzheimer’s Association or the Dementia Society of America.
