In Loving Memory Of
Vicki Lynn Hoffmann
Vicki Hoffmann was born in Slayton, Minnesota on April 18, 1953, to Don and Ellen (Knapper) Kathman. She grew up in Slayton and graduated from Slayton High School in 1971. She married the love of her life, Ed Hoffmann, on June 17, 1972, and they started their family, living their entire married lives in Slayton. Vicki stayed at home to raise their 4 children and helped Ed with his business, Hoffmann Construction. She also worked as a paraprofessional at MCC Elementary School for several years. Vicki gave back to her community by volunteering at MCC Schools, her church and the Slayton Manor. She enjoyed attending her children’s and grandchildren’s activities and watching all Minnesota sports teams, cheering loudest for the Vikings. She loved spending time with everyone at the family lake cabin where she made endless stacks of chocolate chip pancakes for the grandkids every morning. She was an excellent cook but would never believe us when we said that her gravy was as good as her mom’s. She loved a good cup of coffee and visiting with people as she ran her errands around town. Vicki was strong in her faith and was known to be strong and feisty, especially over the past 2 years as she battled cancer and lung disease without a tear or complaint. Vicki passed away surrounded by her family on April 24, 2025, at the Our House Hospice Home. She was a member of Faith Community Lutheran Church in Slayton. May she now rest easy in the arms of her Savior. Blessed be her memory.
Vicki is survived by Ed, her husband of 52 years and 4 children. Nikki (Jeff) Cheskie of Avoca, Staci (Derek) Bundesen of Hills, Jesse (Amy) Hoffmann of Slayton, and Justin (Katie) Hoffmann of Slayton. 9 grandchildren: Kyle and Drew Cheskie, Grace (Preston) Wilhelmi, Ty Bundesen, Brody and Josie Hoffmann, Easton, Mason and Emma Hoffmann, and 1 great-grandson on the way. Her sister, Conni Baker of Coon Rapids, brother-in-law, Rick Manderscheid of Slayton, and many in-laws, nieces, nephews, and cousins. She is preceded in death by her parents, sister, Lori Manderscheid, brother, Terry Kathman, brother-in-law, Jim Baker, nephew, Blake Manderscheid, and great-niece, Lorin Prahm.
